Our next cookbook!

This is the first Monday in more than 5 months that I haven’t posted a Physical Challenge update. (That only makes sense, given that the physical challenge itself – the Virgil Crest Ultra – was last weekend.) It seemed only fitting to mark this Monday with another kind of big news. And on that front, Kelli and I are delighted to announce the scheduled publication of our next cookbook! It’s due out in Spring 2011, and is coming from The Experiment Publishing, the same folks that brought you our debut release, Artisanal Gluten-Free Cooking. This time around, we’re focusing on one thing: gluten-free cupcakes.

Right now we’re up to our eyeballs in recipe testing and photography. But given that the book isn’t due out until Spring 2011, why are we telling you now? Because we want you to be a part of the process! What is your favorite cupcake flavor? What “traditional” cupcake is an absolute must-have in a gluten-free version, because life isn’t worth living without it? Tell us, by leaving a comment on this post.
We’ll compile the responses for the next two weeks, running through Friday, Oct 15. Then, starting on Monday, Oct. 18, we’ll open up the list to two weeks of voting by you, the readers of No Gluten, No Problem, running through Friday, Oct. 29. The cupcake flavor that gets the most votes will be included in the cookbook, and the person that originally submitted the flavor suggestion will receive a complimentary signed copy of the book upon publication. The winning flavor will be announced here on Monday, Nov 1. Sound good?
So start your engines, and let the cupcake creations begin…

    A coworker of mine made pumpkin cream cheese cupcakes, topped with cinnamon/nutmeg streusel, and brought them into work today… they looked AMAZING, but I couldn’t have one 🙁 I’ll be trying to invent a non-glutenous version myself, but I’d love to see it in your cookbook as well 🙂

    I second Deanna’s red velvet; but besides that, maybe like a turtle cupcake. Something with nuts and chocolate and caramel.

    Or how about pineapple upside down. Would that work in a cupcake paper?

    You guys are so cool to have energy for all that testing.

    I’ve just this fall enrolled all but one of my school aged kids in school, (five in school, one homeschooled, and three pre-schoolers, so I’m not out of the water yet!). I can finally start to cook with more than bare basics again. I feel like my kitchen imagination is returning little by little. We had coffee cake for breakfast this morning.

    But I’m not yet to a point of even imagining what’s involved in all the testing of recipes.

    oooohhh there are so many! How about a decadent dark chocolate with a ganache frosting. Or Chocolate Peanut Butter! Is it wrong to need a cupcake at 7 AM?!

    Hey Gang, Thanks for all the great suggestions so far. Keep ’em coming! (Good news…many of your favorites are already in the cookbook, but I won’t say which ones, so I don’t skew the vote for a NGNP readers’ favorite…) I also wanted to add a few flavors that people emailed me individually, rather than leaving as a comment here:

    Chocolate with Fudgy Icing
    Lemony
    Pumpkin with Cream Cheese Frosting
    Red Velvet (again…is a favorite already emerging??)
    Key Lime Pie

    I have yet to find a really good recipe for basic vanilla cup cakes/cake and would love to have one.
    Tips for baking ahead and freezing, w/o ending up with less than stellar cake, would be greatly appreciated. It would really help reduce my b-day season stress. : )

    Also, your recipe for biscuits in the current cook book is soooo yummy! I made two versions yesterday. One version was exactly as you wrote, and the other recipe was dairy-free. I love how easy the recipe is and am thankful for this new family favorite recipe. Well done!

    All of the suggestions sound great! I’d like to suggest a marble cake cupcake – reminiscent of the marble cake pound cake I loved as a kid. Other thoughts are a gingerbread or spice cupcake with a cream cheese/pineapple frosting. Just one other thought since wedding cupcakes seem to be the new thing instead of the tradional wedding cake – you might consider greating your own wedding cupcake version. I know this is going to be a GREAT cookbook.
